As summer is coming to its end, we wanted to take a moment and indulge our readers in some of our very own fall favorites to help us transition into the upcoming holidays.


First and foremost, let's pull out two of our most loved cocktails to help set the mood, of course, one hot and cold (ingredients listed below)! You can never go wrong with a seasonal cocktail to enravish guests while hosting or simply lounging by the fire - a touch of rum to warm the soul. If you opt for wine, we suggest a Pinot Noir from DuMol, which encompasses all the savory spices, earthy undertones, and lively fruits of the fall season - The West Chester Reach Pinot Noir from Russian River Sanoma, California.


Apple Cider Hot Toddie Fresh Pair Cocktail

  • 4 ounces (1/2 cup) apple cider -1 medium Bosc pear

  • 1 teaspoon lemon juice -2 tablespoons citrus-infused vodka

  • 2 teaspoons honey -1 tablespoon pomegranate juice

  • 1 cinnamon stick -1 tablespoon fresh lime juice

  • 2 ounces (1/4 cup) bourbon -1 tablespoon agave syrup or sugar syrup

  • -3 tablespoons hard apple cider


 

As the season starts to change and it gets a bit cooler, there truly is nothing better than a cozy homemade meal. We wanted to ensure we could find something quick and easy that would feed lots of mouths, and a nod to our Irish roots here at Ascot Manor. Irish Strew


-2 tbsp rapeseed oil

-1kg lamb shoulder, trimmed and cut into 2.5cm chunks

-2 onions, peeled and roughly chopped

-3 celery stalks, trimmed and sliced

-1 bay leaf

-4 large carrots, peeled and roughly chopped

-1-liter beef or lamb stock

-900g potatoes, peeled and cut into 1cm slices

-A good knob of butter

-Sea salt and ground black pepper

-Slices of white bread to serve
